Chestnut cream madeleines

Ingredients for about thirty madeleines
- 3 organic eggs
- 150g of organic flour
- 125g of melted organic butter
- 130g of organic caster sugar
- 1 sachet of vanilla sugar
- 1 pinch of salt
- 1 teaspoon of phosphate-free yeast
- 250 g or 3 large tablespoons of chestnut cream

Preparation:

Turn the oven on to 200°.
Beat the eggs and sugars in a bowl until the mixture turns white.
Add the melted butter and mix well again. Add the flour, the
Place the butter and salt in a bowl and gradually add them to the liquid mixture. Mix well with a whisk until you obtain a smooth paste.
Finally, add the chestnut cream and mix everything together well. Butter a madeleine mold and pour a tablespoon of batter into each compartment.
Cook for 10 minutes and repeat until all the dough is used up.
Turn the madeleines out onto a wire rack to cool. They have a lovely dark color and a subtle flavor thanks to the chestnut cream!

25g of organic dark chocolate
2 teaspoons of sugar, or as desired (optional)

Preparation:
Grate the chocolate, pour the milk into a saucepan, heat over medium heat until the chocolate is melted and the hot chocolate thickens.
Enjoy it warm, with or without sugar
