A seasonal soup to face the winter days with energy and good mood!

Ingredients:

- 1 kg organic carrots

- 1 shallot -

1 thumb-sized piece of ginger

- 1 bunch of fresh coriander

- Salt, pepper

Preparation:

In a cast iron casserole, fry the shallot, cut into small pieces, until golden. Add the sliced carrots and fry for a few minutes. Add the ginger grated with a peeler. Season generously with salt and pepper and cover with water. Cook over medium heat for 35-45 minutes until the carrots are tender.

Blend the soup to a velvety consistency.

Season with more salt if necessary and sprinkle with fresh coriander leaves.
